Petimezopita (Cake with grape syrup)

- 150 ml grape syrup
- 80 ml Altis Kalamata P.D.O. Extra Virgin Olive Oil
- 150 ml orange juice
- 2 eggs
- 250 g self-raising flour
- 1 tsp lemon zest
- ½ tsp baking soda
- 1 tsp cinnamon
- 1 capsule vanillin
- 50 g raisins
- 50 g sesame seeds
Instructions
EXECUTION
- In a bowl, whisk together the grape syrup with the olive oil and the eggs.
- Dissolve the baking soda in the orange juice and add to the bowl. Add the cinnamon and the lemon zest together.
- Finally, add the flour and raisins, mix well, and transfer to a well-greased loaf tin or baking tray.
- Sprinkle with sesame seeds and bake in a pre-heated oven at 180°C for about 40 minutes.
- Cut into pieces and serve.
- You can also add 100 g roughly chopped nuts.
