Traditional melomakarona

Ingredients

For the melomakarona
  • 550 g flour
  • 50 g ground walnuts
  • 300 ml Altis Kalamata P.D.O. Extra Virgin Olive Oil
  • 80 g sugar
  • 1000 ml fresh orange juice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 Tbsp cinnamon
  • ½ tsp ground cloves
For the syrup
  • 350 g honey
  • 250 ml water
  • 150 g sugar
  • 1 cinnamon stick
  • Peel of 1 orange and 1 lemon
You will also need
  • 100 g walnuts, roughly chopped

      Instructions

      EXECUTION
      1. Using an electric mixer, beat together the olive oil, sugar and spices for 2-3 minutes. Add the baking powder, baking soda, orange juice, ground walnuts and flour.
      2. Knead into a soft dough that does not stick to the hands and set aside for some time.
      3. Preheat the oven to 180°C.
      4. Shape the dough into melomakarona (25 grams each) and place on a baking tray covered with greaseproof paper, leaving a small gap between them.
      5. Bake for 22-25 minutes.
      6. When the melomakarona are done, prepare the syrup by boiling all the ingredients for 6-7 minutes, skimming regularly.
      7. Soak the melomakarona in the honey syrup, arrange on a plate, and sprinkle with walnuts.
      If you like, add a little orange or lemon zest to the dough.
