Ingredients

  • 1000 gr. redfish or scorpaena
  • 500 gr. sole or codfish or perch
  • 2 onions
  • 1 ½ teaspoons sweet red pepper
  • ½ teaspoon hot red pepper
  • 2 lemons
  • 60 ml. Altis Traditional Extra Virgin Olive Oil
  • Salt

      Instructions

      EXECUTION
      1. We scrape and rinse the fish.
      2. We mince the onions and saute them in a deep saucepan with half the olive oil and add the pepper. Once the onions become soft, we add 300 ml. water, the salt, fish and the remaining olive oil.
      3. We cook the food for approximately 30 min., until the sauce becomes thick; once the bourdetto is ready, we remove it from the fire and add the lemon juice.
      4. We serve the bourdetto with its sauce on a serving plate.
