Bourdetto (Fish Stew)

- 1000 gr. redfish or scorpaena
- 500 gr. sole or codfish or perch
- 2 onions
- 1 ½ teaspoons sweet red pepper
- ½ teaspoon hot red pepper
- 2 lemons
- 60 ml. Altis Traditional Extra Virgin Olive Oil
- Salt

EXECUTION
- We scrape and rinse the fish.
- We mince the onions and saute them in a deep saucepan with half the olive oil and add the pepper. Once the onions become soft, we add 300 ml. water, the salt, fish and the remaining olive oil.
- We cook the food for approximately 30 min., until the sauce becomes thick; once the bourdetto is ready, we remove it from the fire and add the lemon juice.
- We serve the bourdetto with its sauce on a serving plate.
