Cake with peanuts and honey

Ingredients

For the cake
  • 80 ml. Altis Chania Crete Extra Virgin Olive Oil
  • 140 gr. sugar
  • 150 gr. thyme honey
  • 50 ml. water
  • 2 eggs
  • 250 gr. all-purpose flour
  • 100 gr. Aegina peanuts, minced
  • ½ teaspoon cinnamon
  • 1 ¼ teaspoons baking power
  • Juice and zest from 1 lemon
  • ¼ teaspoon salt
For the glaze
  • 100 gr. powder sugar
  • 20 ml. olive oil
  • Juice from 1 lemon

      Instructions

      EXECUTION
      1. We preheat the oven at 180ο C and oil a non-stick cake form.
      2. In a small saucepan, we heat the honey and water for 2 min., remove it from the heat and add the lemon zest and juice.
      3. In a bowl, we mix the flour, peanuts, salt and baking power.
      4. In the mixer, we beat the sugar and eggs for 2 min., add the olive oil, honey, cinnamon and the flour mix, continuing to beat for 1 min.
      5. We place the dough in the non-stick cake form and bake it for 50 min. at 180ο C with the hot air on.
      6. We leave the honey cake to cool and then remove it from the form.
      7. We prepare the glaze, mixing all the materials together, and we pour it over the cake; if we wish, we can sprinkle it with ground Aegina peanuts.
      - We can use orange instead of lemon - Instead of white sugar we can use soft brown sugar
