Ingredients

INGREDIENTS
  • 200 gr. grates
  • 1 onion, minced
  • 2 garlic cloves
  • 2 zucchini, cut in cubes
  • 2 carrots, cut in cubes
  • 200 gr. white mushrooms, sliced
  • 200 gr. multi-coloured peppers, cut in cubes
  • 200 gr. celery roots, cut in cubes
  • 60 ml. Altis Chania Crete Extra Virgin Olive Oil
  • 650 ml. warm vegetable broth
  • ½ teaspoon thyme
  • 1 teaspoon concentrated tomato juice
  • 4 tablespoons parsley, minced
  • Pepper
  • Salt

      Instructions

      EXECUTION
      1. We preheat the oven at 180ο C.
      2. In a large frying pan, we heat the olive oil and saute all the vegetables until they become soft.
      3. We add the thyme, concentrated tomato juice, broth, salt and pepper, bring the mix to boil and then remove from the heat.
      4. We transfer the contents of the saucepan into a baking pan; we add the groats and bake the mix in the oven for 25΄-30΄.
      5. We sprinkle the mix with parsley, and then serve.
