Beans with peppers and aubergines

  • 250 gr. large white beans
  • 2 tablespoons parsley, minced
  • 4 aubergines, cut in medium chunks
  • 5 sweet pepper, cut in medium chunks
  • 2 leeks, sliced
  • 2 onions, minced
  • 1 fennel root, cut in medium chunks
  • 1 carrot, cut in cubes
  • 3 tomatoes, minced
  • 120 ml Altis Chania Crete Virgin Olive Oil
  • Red pepper
  • Salt


      1. In a saucepan, we boil the beans for 45΄ in plenty of water, we drain them and keep the boiled water.
      2. In a saucepan, we saute the vegetables in half the olive oil for 5΄; we add the tomatoes, beans, salt and pepper.
      3. We transfer the contents of the saucepan into a heat-resistant baking pan and we add about 250 ml. form the boiled water and the remaining olive oil.
      4. We bake the beans in a preheated oven at 220°C for 40΄, and then serve.
