Beef with green beans

Ingredients

- 1000 g beef (shoulder or neck)
- 1000 g green beans
- 1 onion
- 1 carrot
- 4 spring onions
- 2 ripe tomatoes
- 250 ml tomato juice
- 250 ml beef stock
- 80 ml Altis Extra Virgin Olive Oil
- 1 bunch parsley
- 4-5 allspice berries
- ½ tsp sugar
- Freshly ground pepper
- Salt

EXECUTION
- Prepare the beans and cut the beef into medium-sized pieces.
- Heat half the olive oil in a wide saucepan and fry the meat on all sides until golden.
- Finely chop the onions and the carrot. Add them to the pan and continue frying for another 2-3 minutes.
- Add the tomato juice, tomatoes (finely chopped), spices, sugar and stock.
- Simmer gently for about 40 minutes.
- Then sauté the beans in the remaining olive oil and add to the saucepan together with the finely chopped parsley. Season with salt and pepper.
- Allow the food to simmer gently for about 40 minutes and serve.
- Add some extra flavour with a cinnamon stick
- Use any variety of beans you like
