Beef with green beans

Ingredients

INGREDIENTS
  • 1000 g beef (shoulder or neck)
  • 1000 g green beans
  • 1 onion
  • 1 carrot
  • 4 spring onions
  • 2 ripe tomatoes
  • 250 ml tomato juice
  • 250 ml beef stock
  • 80 ml Altis Extra Virgin Olive Oil
  • 1 bunch parsley
  • 4-5 allspice berries
  • ½ tsp sugar
  • Freshly ground pepper
  • Salt

      Instructions

      EXECUTION
      1. Prepare the beans and cut the beef into medium-sized pieces.
      2. Heat half the olive oil in a wide saucepan and fry the meat on all sides until golden.
      3. Finely chop the onions and the carrot. Add them to the pan and continue frying for another 2-3 minutes.
      4. Add the tomato juice, tomatoes (finely chopped), spices, sugar and stock.
      5. Simmer gently for about 40 minutes.
      6. Then sauté the beans in the remaining olive oil and add to the saucepan together with the finely chopped parsley. Season with salt and pepper.
      7. Allow the food to simmer gently for about 40 minutes and serve.
