Chicken with peppers

  • 500 g chicken breast
  • 350 g coloured peppers
  • 2 onions
  • 10 cherry tomatoes
  • 1 Tbsp mustard
  • 1 tsp oregano
  • 1 tsp sweet paprika
  • 200 g tomato juice
  • 200 ml chicken stock
  • 100 g hard feta cheese
  • 50 ml Altis Kalamata P.D.O. Extra Virgin Olive Oil
  • Freshly ground pepper
  • Salt


      1. Cut the chicken into bite-sized pieces, slice the onions, and cut the peppers into strips.
      2. Heat the olive oil in a large deep frying pan and fry the chicken until golden.
      3. Add the pepper and onion and continue frying for 3-4 minutes. Season with salt and pepper, and sprinkle with paprika and oregano.
      4. Add the tomato juice and chicken stock, and simmer for about 30 minutes until the sauce has thickened.
      5. Remove from the heat, add the cherry tomatoes and the feta (crumbled), and serve.
      - You can make this dish with a whole chicken.
