Chicken with peppers

Ingredients

- 500 g chicken breast
- 350 g coloured peppers
- 2 onions
- 10 cherry tomatoes
- 1 Tbsp mustard
- 1 tsp oregano
- 1 tsp sweet paprika
- 200 g tomato juice
- 200 ml chicken stock
- 100 g hard feta cheese
- 50 ml Altis Kalamata P.D.O. Extra Virgin Olive Oil
- Freshly ground pepper
- Salt

EXECUTION
- Cut the chicken into bite-sized pieces, slice the onions, and cut the peppers into strips.
- Heat the olive oil in a large deep frying pan and fry the chicken until golden.
- Add the pepper and onion and continue frying for 3-4 minutes. Season with salt and pepper, and sprinkle with paprika and oregano.
- Add the tomato juice and chicken stock, and simmer for about 30 minutes until the sauce has thickened.
- Remove from the heat, add the cherry tomatoes and the feta (crumbled), and serve.
- You can make this dish with a whole chicken.
