Buckwheat and Chickpeas Salad

  • 150 gr. buckwheat, boiled
  • 150 gr. chickpeas, boiled
  • 50 gr. baby spinach
  • 100 gr. multi-coloured peppers, cut in cubes
  • 2 scallions, minced
  • 3 dry apricots, minced
  • 3 dry dates
  • 2 tablespoons coriander, minced
  • 1 tablespoon mint
  • ¼ teaspoon cumin
  • 1 teaspoon ginger, ground
  • 50 ml. Altis Traditional Extra Virgin Olive Oil
  • 20 ml. white balsamic vinegar
  • 1 teaspoon honey
  • 1 lime


      1. In a bowl, we mix the buckwheat, chickpeas, vegetables, fruit, herbs and spices.
      2. We mix the olive oil, cumin, ginger, vinegar, honey and lime juice.
      3. We pour the sauce over the salad, stir and then serve.
      For a richer taste, we can also add avocado, raisins and sweet potatoes
