Buckwheat and Chickpeas Salad

Ingredients
INGREDIENTS
- 150 gr. buckwheat, boiled
- 150 gr. chickpeas, boiled
- 50 gr. baby spinach
- 100 gr. multi-coloured peppers, cut in cubes
- 2 scallions, minced
- 3 dry apricots, minced
- 3 dry dates
- 2 tablespoons coriander, minced
- 1 tablespoon mint
- ¼ teaspoon cumin
- 1 teaspoon ginger, ground
- 50 ml. Altis Traditional Extra Virgin Olive Oil
- 20 ml. white balsamic vinegar
- 1 teaspoon honey
- 1 lime
Instructions
EXECUTION
- In a bowl, we mix the buckwheat, chickpeas, vegetables, fruit, herbs and spices.
- We mix the olive oil, cumin, ginger, vinegar, honey and lime juice.
- We pour the sauce over the salad, stir and then serve.
For a richer taste, we can also add avocado, raisins and sweet potatoes
