Celery roots with peas

  • 300 gr. peas
  • 500 gr. celery roots
  • 1 onion, minced
  • 1 carrot, minced
  • 1 leek, minced
  • 1 small bunch of dill, minced
  • 70 ml. Extra Virgin Oil
  • 300 ml. vegetable broth
  • 1 lemon
  • Salt
  • Freshly ground pepper


      1. We cut the celery roots in medium chunks.
      2. In a saucepan, we heat 2 tablespoons olive oil in medium heat and saute the onions, carrots and leek for 2-3 min. We add the peas, celery roots and dill.
      3. We add the salt and pepper, warm broth and olive oil, and we boil for 40 min. in low heat, without stirring.
      4. We pour the lemon juice on top and then serve.
      - If we wish, we can add egg-lemon sauce
