Celery roots with peas

- 300 gr. peas
- 500 gr. celery roots
- 1 onion, minced
- 1 carrot, minced
- 1 leek, minced
- 1 small bunch of dill, minced
- 70 ml. Extra Virgin Oil
- 300 ml. vegetable broth
- 1 lemon
- Salt
- Freshly ground pepper
Instructions
EXECUTION
- We cut the celery roots in medium chunks.
- In a saucepan, we heat 2 tablespoons olive oil in medium heat and saute the onions, carrots and leek for 2-3 min. We add the peas, celery roots and dill.
- We add the salt and pepper, warm broth and olive oil, and we boil for 40 min. in low heat, without stirring.
- We pour the lemon juice on top and then serve.
- If we wish, we can add egg-lemon sauce
