Ingredients

For the dough
  • 350 gr. all purpose flour
  • 50 gr. hard flour
  • 320 ml. water (approximately)
  • 8 gr. dry yeast
  • 50 ml. Altis Chania Crete Extra Virgin Olive Oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
Additional ingredients
  • 2-3 large onions
  • 6 large tomatoes
  • 100 ml. olive oil
  • Coarse salt

      Instructions

      EXECUTION
      1. In a bowl, we dissolve the yeast and sugar in the water, add 3 tablespoons flour and leave the mix in a warm place for 10΄.
      2. We add the remaining flour and olive oil in the yeast mix and we knead it until it becomes an elastic dough; we leave it aside to rest for 10’.
      3. We cut the tomatoes in thick slices, place them in a strainer and sprinkle them with coarse salt.
      4. We pour half the olive oil in a large baking pan, add the dough and press it with our hands so as to spread it all over the pan.
      5. We leave the dough (ladenia) for 20’ in a warm place and then add the onions and tomatoes; we sprinkle it with coarse salt and pour the rest of the olive oil over it.
      6. We preheat the oven at 200°C and bake the lathenia at 180°C for 45 min.
      7. We serve the lathenia hot or cold.
