500 gr. fresh anchovies, cleaned
250 ml. vinegar from red wine
4 garlic cloves, sliced
1 small bunch of dill, minced
200 ml. Altis Traditional Extra Virgin Olive Oil
50 gr. capers
Coarse sea salt
We place the anchovies in a strainer and rinse them in plenty of water.
We split each anchovy in the middle and remove the fishbone.
We rinse all the anchovy fillets in cold water.
In a big bowl, we place the anchovies, salt them well, pour the vinegar over them, and leave them covered in the fridge for 6 hours.
We add the garlic, capers, olive oil and dill.
Each time we serve the anchovies, we add extra olive oil.
