Marinated anchovies

  • 500 gr. fresh anchovies, cleaned
  • 250 ml. vinegar from red wine
  • 4 garlic cloves, sliced
  • 1 small bunch of dill, minced
  • 200 ml. Altis Traditional Extra Virgin Olive Oil
  • 50 gr. capers
  • Coarse sea salt


      1. We place the anchovies in a strainer and rinse them in plenty of water.
      2. We split each anchovy in the middle and remove the fishbone.
      3. We rinse all the anchovy fillets in cold water.
      4. In a big bowl, we place the anchovies, salt them well, pour the vinegar over them, and leave them covered in the fridge for 6 hours.
      5. We add the garlic, capers, olive oil and dill.
      6. Each time we serve the anchovies, we add extra olive oil.
