Ingredients

- 2 kilos lamb or kid, cut in large portions
- 500 ml. red dry wine
- 2 large bunches of dill, minced
- 50 ml. Altis Chania Crete Extra Virgin Oil
- Freshly ground pepper
- Salt

EXECUTION
- We marinate the meat in the wine for 8 hours.
- We preheat the oven at 220ο C for 30’.
- We remove the meat pieces from the marinade, add salt and pepper, and place them on the casserole rack.
- We add an adequate quantity of wine so as to cover the bottom of the casserole but not to touch the meat; we pour the olive oil over the lamb and sprinkle it with the dill.
- We cover the casserole with baking paper and close the lid.
- We bake the lamb at 220ο C for 30’, then lower the heat to 120ο C and continue to cook for approximately 4 hours.
- If possible, we spread vine sprouts along the casserole bottom, to add extra flavour to the lamb
