Ingredients

  • 1 kilo leeks
  • 3 celery sprigs
  • 2 onions, minced
  • 100 ml Altis Kalamata Extra Virgin Olive Oil
  • 4 tomatoes, minced
  • 250 gr. vegetable broth
  • 400 gr. veal minced meat
  • 300 gr. pork minced meat
  • 150 gr. dry breadcrumbs
  • 1 egg
  • 2 tablespoons vinegar
  • 50 ml. fresh milk
  • 3 tablespoons parsley, minced
  • Red pepper
  • Salt

      Instructions

      EXECUTION
      1. In a bowl, we place the minced meat; we add one onion, the egg, vinegar, parsley, red pepper, milk, breadcrumbs and salt.
      2. We knead the minced meat for 5΄ and we form medium-sized meatballs.
      3. We wash the leeks and celery, and chop them in large chunks.
      4. In a saucepan, we saute the onion in a little olive oil, we add the leeks, celery, remaining olive oil, tomatoes, broth, salt, pepper, and we cook the food for about 10΄.
      5. We add the meatballs and we continue to cook for about 25΄-30΄ over medium heat, regularly checking its liquids; if necessary, we add a little more water.
      6. We serve the food with a little minced parsley.
      - Instead of tomatoes, we can use lemon or egg-lemon sauce.
