Ingredients

- 500 g fresh okra
- 2 onions
- 2 spring onions
- 1 small bunch parsley
- 3 ripe tomatoes
- 200 g tomato juice
- 1 tsp sugar
- 3 Tbsp vinegar
- 100 ml Altis Extra Virgin Olive Oil
- Freshly ground pepper
- Salt
Instructions
EXECUTION
- In a frying pan, sauté the okra in 3-4 Tbsp olive oil for a few minutes, add the vinegar, and transfer to an oven dish.
- Finely chop the onions and the tomatoes.
- In the same frying pan, sauté the onion in 2 Tbsp olive oil. As soon as it is soft, add the sugar, tomatoes, tomato juice, and season with salt and pepper.
- Pour the sauce over the okra, add the parsley and spring onions (finely chopped), pour over the remaining olive oil and stir together.
- Cook the okra in the oven for about 50 minutes at 180°C.
You can also add a few potatoes to the oven dish
