Revithato from Lesbos

Ingredients

INGREDIENTS
  • 1000 g beef (suitable for cooking in a saucepan) cut into medium-sized pieces
  • 300 g chickpeas (soaked)
  • 2 onions
  • 3 tomatoes
  • 1½ tsp tomato purée
  • 60 ml Altis Extra Virgin Olive Oil
  • 1 bay leaf
  • Freshly ground pepper
  • Salt

      Instructions

      EXECUTION
      1. Soak the chickpeas overnight in plenty of lukewarm water with baking soda.
      2. Finely chop the onions and wipe the meat.
      3. Heat the olive oil in a large saucepan and brown the meat on all sides.
      4. Add the onions and continue frying for 2-3 minutes, then add the tomato puree, chickpeas, salt and pepper, and the bay leaf.
      5. Finally, add the tomatoes (roughly chopped) and 500 ml hot water and simmer gently for about 1 hour and 20 minutes, checking regularly that there is enough liquid.
      6. The Revithato is ready to serve when the chickpeas are mushy.
      If you like, you can use pork instead of beef.
