Revithato from Lesbos

Ingredients

- 1000 g beef (suitable for cooking in a saucepan) cut into medium-sized pieces
- 300 g chickpeas (soaked)
- 2 onions
- 3 tomatoes
- 1½ tsp tomato purée
- 60 ml Altis Extra Virgin Olive Oil
- 1 bay leaf
- Freshly ground pepper
- Salt

EXECUTION
- Soak the chickpeas overnight in plenty of lukewarm water with baking soda.
- Finely chop the onions and wipe the meat.
- Heat the olive oil in a large saucepan and brown the meat on all sides.
- Add the onions and continue frying for 2-3 minutes, then add the tomato puree, chickpeas, salt and pepper, and the bay leaf.
- Finally, add the tomatoes (roughly chopped) and 500 ml hot water and simmer gently for about 1 hour and 20 minutes, checking regularly that there is enough liquid.
- The Revithato is ready to serve when the chickpeas are mushy.
If you like, you can use pork instead of beef.
