Pork steaks with sage and mustard

- 6 pork neck steaks
For the sauce
- 1 sprig fresh sage
- 50 ml Altis Kalamata P.D.O. Extra Virgin Olive Oil
- 50 ml lemon juice
- 80 g mustard
- 1 clove garlic
- ½ tsp ground coriander
- Freshly ground pepper
- Salt

EXECUTION
- Sprinkle the steaks with salt, grind over some pepper and cook them to your liking. While the steaks are cooking, prepare the sauce.
- In a frying pan, briefly sauté the garlic (halved) and the sage leaves.
- Remove the garlic, add the lemon juice, and remove from the heat as soon as it starts to bubble.
- Add the mustard and coriander and stir until the sauce is smooth.
- Immediately pour the sauce over the hot steaks and serve with potatoes.
- If you don’t like sage, use oregano instead
